Guntur Kodi Kura - Chicken Curry in Guntur Style
Hello everyone,
I would like to present one of the favourite and finger licking authentic recipe "Guntur Kodi Kura". To brief you about Guntur - Andhra Pradesh - It is famous for spices (especially red chillies) and gave us a few tremendous recipes.
Very recently we've tried this at home and was successful in getting the authentic taste. You may also try this at home. Please follow the below process:

- Chicken 500 gms (1/2 KG) cut into medium size pieces
- Onions - 2 medium size (chopped into small)
- Green chillies - 2 (chopped into medium)
- Ginger Garlic Paste - 1 tbsp
- Tomato - 2 medium size (chopped into small)
- Refined oil - as needed
- Salt - as needed
- Turmeric (Haldi) - 1/2 tbsp
- Red chilli powder - 1 tbsp
- Coriander leaves (Kothimeer) - 1 chopped
Spices:
- Cumin (Jeera) seeds - 1 tbsp
- Cinnamon (Dalchina Chekka) - 1 medium piece
- Coriander (Dhaniya) seeds - 1 tbsp
- Cloves (Lavangam) - 6 no's
- Cardamom (Yaluka) - 3 no's
- Black Peppercorns (Miriyalu) - 6 no's
- Red chillies - 3 no's
- Poppy seeds (Gasagasalu) - 1 tbsp
For Garam masala:
- Dry roast all the above spices and grind to get a fine powder and keep it aside.
Recipe preparation:
- Add oil (3 - 4 tbsp) in a pan and heat it, add cumin (1/2 tbsp), cinnamon(small piece), saute these for a minute.
- Add chopped onions & green chillies, fry these in a low flame till the onions become golden brown colour, while doing so you may add some salt(1/4 tbsp) as it helps the onions to fry faster.
- Add Ginger garlic paste(1 tbsp) and fry it till the raw smell goes out - Do not over burn. Add 2 tbsp of water to have them alive with aroma coming from the pan and oil gets separated. Mix all these well and add tomato's and cook on a low flame till it softens.
- Add Turmeric (1/4 tbsp), Red chilli powder(1 tbsp) and some salt (1/2 tbsp) mix well. After that add the cleaned chicken pieces into this pan and mix well. Add 2 small cups/glass of water and stir well.
- You may now add 1 1/2 tbsp Garam Masala which was prepared earlier to the above mixture and stir well. Close the pan with a lid and set it on low flame to cook for 10 mins, after 5 mins you may check the salt and add if needed.
- After 10 mins, check the chicken whether it's cooked or not, if yes add the remaining garam masala (1/2 tbsp) and stir well. Cook it for another 5- 7 mins to check the gravy consistency (if it thickens), finally add the chopped coriander leaves to it and remove from the flame.
